Roasted Cherry Tomato Caprese

For a special night cooking at home, we can begin with a dish that is usually associated with summer but is perfect year-round. How about a tomato and mozzarella cheese salad?


Ingredients (4 servings)

21 Litre pints of cherry tomatoes


  4 thyme sprigs

  1/2 garlic clove (minced)

  1/4 cup of Italica Extra Virgin Olive Oil

  8 ounces225g of fresh mozzarella, cut into chunks

  Kosher salt and pepper to season

  4 slices of toast

Directions

Begin by preheating the oven to 180°. In the meantime, mix the tomatoes, thyme leaves, garlic and oil on a baking sheet and season with a bit of salt and pepper. Bake in the oven for about 40 minutes. The key is to wait for the tomatoes to burst and become slightly roasted. Once this has occurred, take them out of the oven and allow to cool. 

Transfer the tomato mixture and juices to a plate and cover with the mozzarella chunks. Serve on toasted bread with extra virgin olive oil for added flavor. Bon appétit!​​​​​​​

*Chef’s tip*

You can cook the tomatoes a day in advance. Cover them and allow to cool. Heat the tomatoes slightly before serving.

   1/2 cup of Italica Extra Virgin Olive Oil

  2 large egg yolks

  3 garlic cloves

  4 teaspoons of lemon juice

  1 teaspoon of dijon mustard

  Salt to taste

  French fries

Directions

Place the garlic, egg yolks, lemon juice and salt in a blender or food processor. Turn on the device and slowly add the extra virgin olive oil until it emulsifies. Once the sauce has thickened and become creamy, serve with fries and dip away!

You can also serve garlic aioli with roasted vegetables or use it as a sandwich spread.
